- 4 large russet potatoes (about 250 grams each)
- 450 grams ground beef (80% lean)
- 1 ½ cups shredded cheddar cheese (about 170 grams)
- 1 cup diced tomatoes (about 150 grams)
- ½ cup chopped pickles (about 75 grams)
- ½ cup sour cream (about 120 grams)
- 1 tablespoon olive oil
- 1 teaspoon salt, divided
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Instructions
- Preheat oven to 200°C or 400°F. Line a baking sheet with parchment paper.
- In a small bowl, combine salt, black pepper, garlic powder, and onion powder.
- Rub potatoes with olive oil and sprinkle with half of the seasoning mix. Place on the prepared baking sheet.
- Bake for 50 to 60 minutes until tender.
- While potatoes bake, cook ground beef in a large skillet over medium heat for 8 to 10 minutes, breaking it apart and seasoning with the remaining spice mix.
- Slice open baked potatoes and fluff the centers with a fork.
- Spoon seasoned ground beef into each potato and top with shredded cheddar cheese.
- Return to the oven for 5 minutes until cheese is melted.
- Top with diced tomatoes, chopped pickles, and a dollop of sour cream. Serve hot.
Notes
- Bake potatoes directly on the oven rack for crispier skin if preferred.
- Shred your own cheddar for smoother melting.
