Description

Fluffy baked russet potatoes stuffed with seasoned ground beef, melted cheddar cheese, fresh tomatoes, tangy pickles, and a creamy dollop of sour cream. All the classic cheeseburger flavors come together in a hearty, fork-friendly comfort dish.


Ingredients

  • 4 large russet potatoes (about 250 grams each)
  • 450 grams ground beef (80% lean)
  • 1 ½ cups shredded cheddar cheese (about 170 grams)
  • 1 cup diced tomatoes (about 150 grams)
  • ½ cup chopped pickles (about 75 grams)
  • ½ cup sour cream (about 120 grams)
  • 1 tablespoon olive oil
  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Preheat oven to 200°C or 400°F. Line a baking sheet with parchment paper.
  2. In a small bowl, combine salt, black pepper, garlic powder, and onion powder.
  3. Rub potatoes with olive oil and sprinkle with half of the seasoning mix. Place on the prepared baking sheet.
  4. Bake for 50 to 60 minutes until tender.
  5. While potatoes bake, cook ground beef in a large skillet over medium heat for 8 to 10 minutes, breaking it apart and seasoning with the remaining spice mix.
  6. Slice open baked potatoes and fluff the centers with a fork.
  7. Spoon seasoned ground beef into each potato and top with shredded cheddar cheese.
  8. Return to the oven for 5 minutes until cheese is melted.
  9. Top with diced tomatoes, chopped pickles, and a dollop of sour cream. Serve hot.

Notes

  • Bake potatoes directly on the oven rack for crispier skin if preferred.
  • Shred your own cheddar for smoother melting.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
