Description
These Cheese Scones are golden, fluffy, and packed with the sharp flavor of mature cheddar. Perfect served warm with a little butter, they make a delicious snack, side, or addition to afternoon tea.

- 500 g plain flour, plus extra for rolling
- 3 tsp baking powder
- 1 tsp English mustard powder
- 1 tsp sea salt
- 80 g butter, straight from the fridge, cut into chunks
- 200 g mature cheddar cheese, coarsely grated
- 300 ml whole milk
- 1 egg, beaten (for glazing)
Instructions
- Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper.
- In a large bowl, combine the flour, baking powder, mustard powder, and salt.
- Add the butter and rub it into the flour mixture using your fingertips until it resembles fine breadcrumbs.
- Stir in most of the grated cheddar cheese, reserving a handful for topping.
- Gradually pour in the milk and mix to form a soft dough.
- Turn the dough out onto a lightly floured surface and gently knead just until combined. Do not overwork.
- Roll or pat the dough to about 2.5 cm (1 inch) thick. Use a round cutter to cut out scones.
- Place scones on the prepared tray, brush the tops with beaten egg, and sprinkle with the reserved cheese.
- Bake for 12–15 minutes, or until golden brown and risen.
- Serve warm, ideally with butter.
Notes
- For extra flavor, add a pinch of cayenne pepper or smoked paprika to the dough.
- Use very cold butter for the best flaky texture.
- These scones are best enjoyed fresh but can be frozen and reheated.
