- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1 cup shredded sharp cheddar cheese
- 1/4 cup chopped fresh chives
- 1/4 cup chopped scallions
- 3/4 cup buttermilk
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
- Stir in cheddar cheese, chives, and scallions.
- Add buttermilk and gently mix until just combined. Do not overmix.
- Turn dough onto a floured surface and pat into a 1-inch thick rectangle.
- Use a biscuit cutter to cut out rounds and place them on the baking sheet.
- Bake for 12–15 minutes until golden brown.
- Cool slightly before serving.

- Substitute sharp cheddar with a milder cheese if preferred.
- Brush tops with melted butter for extra richness.
