- 2 tablespoons unsalted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups cooked chicken breast, shredded
- 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 1 can (10.5 oz) cream of chicken soup
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups biscuit baking mix
- 1 1/4 cups milk
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large oven-safe skillet or baking dish, melt butter over medium heat. Add onion and garlic, cooking until softened.
- Stir in cooked chicken, mixed vegetables, cream of chicken soup, chicken broth, thyme, salt, and pepper. Simmer for 3–4 minutes until heated through.
- In a bowl, combine biscuit baking mix and milk until just combined. Stir in cheese if using.
- Drop spoonfuls of the biscuit batter evenly over the chicken mixture.
- Bake for 25–30 minutes, or until the biscuit topping is golden brown and cooked through.
- Let rest for 5 minutes before serving.
Notes
- For a richer flavor, add 1/4 cup heavy cream to the filling.
- Use rotisserie chicken for a quick shortcut.
- Sprinkle fresh parsley on top before serving for a pop of color.
- This dish can be made ahead and reheated in the oven at 350°F (175°C) until warmed through.
