Description

  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken breast, shredded
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups biscuit baking mix
  • 1 1/4 cups milk
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe skillet or baking dish, melt butter over medium heat. Add onion and garlic, cooking until softened.
  3. Stir in cooked chicken, mixed vegetables, cream of chicken soup, chicken broth, thyme, salt, and pepper. Simmer for 3–4 minutes until heated through.
  4. In a bowl, combine biscuit baking mix and milk until just combined. Stir in cheese if using.
  5. Drop spoonfuls of the biscuit batter evenly over the chicken mixture.
  6. Bake for 25–30 minutes, or until the biscuit topping is golden brown and cooked through.
  7. Let rest for 5 minutes before serving.

Notes

  • For a richer flavor, add 1/4 cup heavy cream to the filling.
  • Use rotisserie chicken for a quick shortcut.
  • Sprinkle fresh parsley on top before serving for a pop of color.
