Description

Ingredients

  • 3 cups rolled oats
  • 1 cup chopped almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 1 1/2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix rolled oats, chopped almonds, and pumpkin seeds.
  3. In another bowl, whisk together melted coconut oil, maple syrup, vanilla extract, and all the spices including salt.
  4. Pour the wet mixture over the dry and stir until everything is evenly coated.
  5. Spread the granola evenly on the baking sheet, pressing it down firmly.
  6. Bake for 25–30 minutes, rotating halfway through without stirring.
  7. Let cool completely before breaking into clusters and storing.
