- 1 cup chopped almonds
- 1/2 cup pumpkin seeds
- 1/2 cup maple syrup
- 1/3 cup coconut oil, melted
- 1 1/2 teaspoons vanilla extract

- 1 teaspoon ground ginger
- 1 teaspoon ground cardamom
- 1/2 teaspoon ground cloves

Instructions
- Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
- In a large bowl, mix rolled oats, chopped almonds, and pumpkin seeds.
- In another bowl, whisk together melted coconut oil, maple syrup, vanilla extract, and all the spices including salt.
- Pour the wet mixture over the dry and stir until everything is evenly coated.
- Spread the granola evenly on the baking sheet, pressing it down firmly.
- Bake for 25–30 minutes, rotating halfway through without stirring.
- Let cool completely before breaking into clusters and storing.
