Description

Carrot Apple Zucchini Bread is a moist, hearty loaf filled with shredded zucchini, diced apples, and grated carrots. Naturally sweet and rich in texture, it’s perfect for breakfast, a snack, or a light dessert!


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded zucchini
  • 1/2 cup diced apple
  • 1/2 cup shredded carrot

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix together oil, brown sugar, eggs, and vanilla extract.
  4. Fold in zucchini, diced apple, and shredded carrot.
  5. Gradually add the wet mixture into the flour mixture and combine just until blended.
  6. Pour batter into prepared loaf pan and bake for 50-60 minutes, until a toothpick inserted in center comes out clean.
  7. Remove from oven and let cool in pan for 10 minutes before turning out onto a wire rack.

Notes

  • For additional texture, fold in chopped walnuts or pecans.
  • Pair with a dollop of cream cheese for a rich twist.
  • Store in an airtight container for up to 5 days.
