- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup vegetable oil
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup shredded zucchini
- 1/2 cup diced apple
- 1/2 cup shredded carrot
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix together oil, brown sugar, eggs, and vanilla extract.
- Fold in zucchini, diced apple, and shredded carrot.
- Gradually add the wet mixture into the flour mixture and combine just until blended.
- Pour batter into prepared loaf pan and bake for 50-60 minutes, until a toothpick inserted in center comes out clean.
- Remove from oven and let cool in pan for 10 minutes before turning out onto a wire rack.
Notes
- For additional texture, fold in chopped walnuts or pecans.
- Pair with a dollop of cream cheese for a rich twist.
- Store in an airtight container for up to 5 days.
