Description

A comforting and creamy pasta dish featuring sweet caramelized onions, eggs, and parmesan, creating a luscious carbonara-style spaghetti with a vegetarian twist.


Ingredients

  • 400g Spaghetti
  • 3 large Yellow onions, thinly sliced
  • 3 large Eggs
  • 1 cup Parmesan cheese, finely grated
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • Salt, to taste
  • Black pepper, freshly cracked, to taste
  • ½ cup Reserved pasta water

Instructions

  1. Place a large skillet over low heat and let it warm while you slice the onions.
  2. In a bowl, whisk together the eggs and grated cheese until smooth. Season with a little black pepper.
  3. In the warm skillet, heat olive oil and butter. Add sliced onions with a pinch of salt. Cook slowly, stirring often, for 25–30 minutes until golden and caramelized.
  4. While onions cook, boil spaghetti in salted water until al dente. Reserve ½ cup of the starchy pasta water before draining.
  5. Once onions are ready, remove skillet from heat. Add drained pasta to the onions and toss.
  6. Slowly stir in egg-cheese mixture, followed by reserved pasta water a splash at a time, until a silky sauce forms.
  7. Taste and adjust seasoning. Add more cheese or pepper if desired.
  8. Plate immediately with extra grated cheese and a sprinkle of herbs if you like.

Notes

  • Use low heat and stir often to properly caramelize the onions.
  • Let pasta cool slightly before adding egg mixture to avoid scrambling.
  • Freshly grate cheese for the best melt and flavor.
  • Reserve pasta water to adjust sauce consistency.
