A comforting and creamy pasta dish featuring sweet caramelized onions, eggs, and parmesan, creating a luscious carbonara-style spaghetti with a vegetarian twist.

- 400g Spaghetti
- 3 large Yellow onions, thinly sliced
- 3 large Eggs
- 1 cup Parmesan cheese, finely grated
- 2 tablespoons Olive oil
- 1 tablespoon Butter
- Salt, to taste
- Black pepper, freshly cracked, to taste
- ½ cup Reserved pasta water
Instructions
- Place a large skillet over low heat and let it warm while you slice the onions.
- In a bowl, whisk together the eggs and grated cheese until smooth. Season with a little black pepper.
- In the warm skillet, heat olive oil and butter. Add sliced onions with a pinch of salt. Cook slowly, stirring often, for 25–30 minutes until golden and caramelized.
- While onions cook, boil spaghetti in salted water until al dente. Reserve ½ cup of the starchy pasta water before draining.
- Once onions are ready, remove skillet from heat. Add drained pasta to the onions and toss.
- Slowly stir in egg-cheese mixture, followed by reserved pasta water a splash at a time, until a silky sauce forms.
- Taste and adjust seasoning. Add more cheese or pepper if desired.
- Plate immediately with extra grated cheese and a sprinkle of herbs if you like.
Notes
- Use low heat and stir often to properly caramelize the onions.
- Let pasta cool slightly before adding egg mixture to avoid scrambling.
- Freshly grate cheese for the best melt and flavor.
- Reserve pasta water to adjust sauce consistency.
