Description

Tender caramelised soy chicken glazed to sticky perfection, served in a soothing garlic ginger broth with bok choy and a sprinkle of scallions. A comforting, flavor-packed dish you’ll crave again and again.

  • 6 bone-in, skin-on chicken thighs
  • 1/3 cup soy sauce
  • 3 tablespoons brown sugar
  • 6 garlic cloves, smashed
  • 2-inch piece fresh ginger, sliced
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 red chili, sliced (optional)
  • 2 green onions, chopped
  • 3 heads baby bok choy, halved

Instructions

  1. Preheat Your Equipment: Heat a large skillet over medium-high heat and lightly oil the surface.
  2. Combine Ingredients: Mix soy sauce, brown sugar, and sesame oil in a bowl. In another bowl, combine cornstarch and water.
  3. Prepare Your Cooking Vessel: Sear chicken thighs skin-side down until golden brown, about 5 minutes per side. Remove and set aside.
  4. Assemble the Dish: In the same pan, sauté garlic and ginger. Pour in chicken broth, return chicken to pan, cover, and simmer for 15 minutes.
  5. Cook to Perfection: Remove lid, stir in soy-sugar mixture, and let reduce to a glaze. Stir in cornstarch slurry and simmer until thickened.
  6. Finishing Touches: Steam bok choy or add to pan during final minutes. Garnish with green onions and red chili.
