- 6 bone-in, skin-on chicken thighs
- 1/3 cup soy sauce
- 3 tablespoons brown sugar
- 6 garlic cloves, smashed
- 2-inch piece fresh ginger, sliced
- 2 cups chicken broth
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1 red chili, sliced (optional)
- 2 green onions, chopped
- 3 heads baby bok choy, halved
Instructions
- Preheat Your Equipment: Heat a large skillet over medium-high heat and lightly oil the surface.
- Combine Ingredients: Mix soy sauce, brown sugar, and sesame oil in a bowl. In another bowl, combine cornstarch and water.
- Prepare Your Cooking Vessel: Sear chicken thighs skin-side down until golden brown, about 5 minutes per side. Remove and set aside.
- Assemble the Dish: In the same pan, sauté garlic and ginger. Pour in chicken broth, return chicken to pan, cover, and simmer for 15 minutes.
- Cook to Perfection: Remove lid, stir in soy-sugar mixture, and let reduce to a glaze. Stir in cornstarch slurry and simmer until thickened.
- Finishing Touches: Steam bok choy or add to pan during final minutes. Garnish with green onions and red chili.
