A savory and slightly sweet chicken dish, featuring caramelised soy-glazed chicken thighs simmered in a fragrant garlic ginger broth, served over fluffy rice for a comforting, umami-rich meal.

- 4 boneless chicken thighs
- 2 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon honey
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon rice vinegar
- 2 tablespoons vegetable oil
- 2 cups chicken broth
- 1 teaspoon sesame oil
- 2 cups cooked white rice
- Chopped green onions, for garnish
- Sesame seeds, for garnish
Instructions
- In a bowl, mix soy sauce, dark soy sauce, brown sugar, honey, and rice vinegar to create the marinade.
- Marinate the chicken thighs in the mixture for at least 20 minutes.
- Heat vegetable oil in a pan over medium-high heat. Sear the chicken thighs on both sides until caramelised and cooked through. Remove and set aside.
- In the same pan, add minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
- Pour in chicken broth and sesame oil. Bring to a simmer and let it reduce slightly.
- Slice the cooked chicken and return to the broth to warm through for 2-3 minutes.
- Serve the chicken and broth over bowls of cooked white rice.
- Garnish with chopped green onions and sesame seeds.
Notes
- For extra flavor, marinate the chicken for up to 2 hours.
- You can use chicken breast instead of thighs for a leaner option.
- Add steamed vegetables like bok choy or broccoli for more nutrients.
