Description

A savory and slightly sweet chicken dish, featuring caramelised soy-glazed chicken thighs simmered in a fragrant garlic ginger broth, served over fluffy rice for a comforting, umami-rich meal.


Ingredients

  • 4 boneless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 2 tablespoons vegetable oil
  • 2 cups chicken broth
  • 1 teaspoon sesame oil
  • 2 cups cooked white rice
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, mix soy sauce, dark soy sauce, brown sugar, honey, and rice vinegar to create the marinade.
  2. Marinate the chicken thighs in the mixture for at least 20 minutes.
  3. Heat vegetable oil in a pan over medium-high heat. Sear the chicken thighs on both sides until caramelised and cooked through. Remove and set aside.
  4. In the same pan, add minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  5. Pour in chicken broth and sesame oil. Bring to a simmer and let it reduce slightly.
  6. Slice the cooked chicken and return to the broth to warm through for 2-3 minutes.
  7. Serve the chicken and broth over bowls of cooked white rice.
  8. Garnish with chopped green onions and sesame seeds.

Notes

  • For extra flavor, marinate the chicken for up to 2 hours.
  • You can use chicken breast instead of thighs for a leaner option.
  • Add steamed vegetables like bok choy or broccoli for more nutrients.
