Description

Tender caramelised soy chicken simmered in a fragrant garlic ginger broth and served over fluffy white rice for a comforting and deeply savory meal.


Ingredients

  • Chicken thighs – 1.5 pounds
  • White rice – 1 cup uncooked
  • Soy sauce – 1/3 cup
  • Chicken broth – 2 cups
  • Garlic cloves – 4 cloves, minced
  • Fresh ginger – 1 tablespoon, grated
  • Brown sugar – 2 tablespoons
  • Vegetable oil – 1 tablespoon
  • Green onions – 2 stalks, sliced

Instructions

  1. Heat a large skillet or shallow pot over medium heat.
  2. In a small bowl, mix the soy sauce and brown sugar until mostly dissolved.
  3. Add the vegetable oil to the pan and let it heat.
  4. Add the chicken thighs in a single layer and brown on both sides.
  5. Stir in the minced garlic and grated ginger until fragrant.
  6. Pour in the soy sauce mixture and chicken broth.
  7. Bring to a gentle simmer, cover, and cook for 20 minutes until the chicken is tender.
  8. Taste the broth and adjust seasoning if needed.
  9. Serve the chicken and broth over freshly cooked white rice and finish with green onions.

Notes

  • For extra broth, add an additional half cup of chicken broth.
  • Simmer uncovered for a few minutes if you prefer a slightly thicker broth.
  • Leftovers taste even better the next day.
