Ingredients
- Chicken thighs – 1.5 pounds
- White rice – 1 cup uncooked
- Soy sauce – 1/3 cup
- Chicken broth – 2 cups
- Garlic cloves – 4 cloves, minced
- Fresh ginger – 1 tablespoon, grated
- Brown sugar – 2 tablespoons
- Vegetable oil – 1 tablespoon
- Green onions – 2 stalks, sliced
Instructions
- Heat a large skillet or shallow pot over medium heat.
- In a small bowl, mix the soy sauce and brown sugar until mostly dissolved.
- Add the vegetable oil to the pan and let it heat.
- Add the chicken thighs in a single layer and brown on both sides.
- Stir in the minced garlic and grated ginger until fragrant.
- Pour in the soy sauce mixture and chicken broth.
- Bring to a gentle simmer, cover, and cook for 20 minutes until the chicken is tender.
- Taste the broth and adjust seasoning if needed.
- Serve the chicken and broth over freshly cooked white rice and finish with green onions.
Notes
- For extra broth, add an additional half cup of chicken broth.
- Simmer uncovered for a few minutes if you prefer a slightly thicker broth.
- Leftovers taste even better the next day.
