Description

A luxurious cheesecake infused with coffee, layered with creamy chocolate and drizzled with rich caramel sauce for a show-stopping dessert.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 1/4 cup strong brewed coffee, cooled
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate, melted
  • 1/2 cup caramel sauce, plus extra for drizzling
  • Whipped cream and chocolate shavings for garnish (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Mix chocolate cookie crumbs and melted butter; press into the bottom of the pan. Set aside.
  3. Beat cream cheese and sugar until smooth. Mix in sour cream, eggs one at a time, coffee, and vanilla.
  4. Divide batter in half. Stir melted chocolate into one half and caramel sauce into the other.
  5. Pour chocolate batter over crust, then carefully add caramel batter on top.
  6. Bake for 55–65 minutes, or until center is set but slightly jiggly. Turn off oven and let cheesecake cool inside with door slightly open for 1 hour.
  7. Chill in the refrigerator for at least 4 hours or overnight.
  8. Before serving, drizzle with extra caramel sauce and garnish with whipped cream and chocolate shavings if desired.

Notes

  • Use a water bath to prevent cracking while baking.
  • Instant espresso powder can replace brewed coffee for a stronger flavor.
  • Store leftovers covered in the fridge for up to 5 days.
