- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 (4 oz) can diced green chilies
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 2 (15 oz) cans white beans, drained and rinsed
- 3 cups chicken broth
- 1/2 cup sour cream
- 1/2 cup shredded Monterey Jack cheese
- Fresh cilantro or green onions for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned, about 5–7 minutes.
- Add onion, garlic, and bell pepper; sauté until vegetables are tender.
- Stir in green chilies, Cajun seasoning, cumin, oregano, salt, and pepper.
- Add white beans and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in sour cream and shredded cheese until melted and well combined.
- Simmer for an additional 5 minutes. Taste and adjust seasoning if needed.
- Serve hot, garnished with cilantro or green onions if desired.
Notes
- Adjust Cajun seasoning to taste for more or less spice.
- Use rotisserie chicken for a quicker version.
- For a thicker chili, mash some of the beans before adding.
