Description

Cajun Potato and Cheddar Sausage Hand Pies are a flavorful, handheld treat featuring a savory filling of seasoned sausage, mashed potatoes, and melted cheddar cheese, all wrapped in a golden, flaky pastry crust.


Ingredients

  • 1 lb sausage (such as Andouille or breakfast sausage), crumbled
  • 2 medium potatoes, peeled and cubed
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup green onions, chopped
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 package refrigerated pie dough (or homemade dough)
  • 1 tablespoon olive oil
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Boil the cubed potatoes in salted water until fork-tender, about 10-12 minutes. Drain and mash with a fork or potato masher. Set aside.
  3. In a skillet, heat olive oil over medium heat. Add the crumbled sausage and cook until browned, about 5-7 minutes.
  4. Add Cajun seasoning, garlic powder, smoked paprika, salt, and pepper to the sausage. Stir in the mashed potatoes and green onions, cooking for another 2-3 minutes until the mixture is well combined.
  5. Remove from heat and fold in shredded cheddar cheese until melted. Let the filling cool slightly.
  6. Roll out the pie dough on a floured surface and cut into circles, about 4 inches in diameter.
  7. Spoon a generous amount of the filling onto the center of each dough circle, then fold the dough over to form a half-moon shape. Press the edges together to seal, using a fork to crimp the edges.
  8. Brush the tops of the hand pies with the beaten egg wash for a golden finish.
  9. Place the hand pies on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
  10. Allow to cool slightly before serving.

Notes

  • For extra flavor, you can add a bit of hot sauce or diced jalapeños to the filling.
  • These hand pies can be frozen before baking and baked directly from frozen when you’re ready to serve.
  • Try using puff pastry for an even flakier crust.
