Cajun Potato and Cheddar Sausage Hand Pies are a flavorful, handheld treat featuring a savory filling of seasoned sausage, mashed potatoes, and melted cheddar cheese, all wrapped in a golden, flaky pastry crust.

- 1 lb sausage (such as Andouille or breakfast sausage), crumbled
- 2 medium potatoes, peeled and cubed
- 1/2 cup cheddar cheese, shredded
- 1/4 cup green onions, chopped
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 package refrigerated pie dough (or homemade dough)
- 1 tablespoon olive oil
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Boil the cubed potatoes in salted water until fork-tender, about 10-12 minutes. Drain and mash with a fork or potato masher. Set aside.
- In a skillet, heat olive oil over medium heat. Add the crumbled sausage and cook until browned, about 5-7 minutes.
- Add Cajun seasoning, garlic powder, smoked paprika, salt, and pepper to the sausage. Stir in the mashed potatoes and green onions, cooking for another 2-3 minutes until the mixture is well combined.
- Remove from heat and fold in shredded cheddar cheese until melted. Let the filling cool slightly.
- Roll out the pie dough on a floured surface and cut into circles, about 4 inches in diameter.
- Spoon a generous amount of the filling onto the center of each dough circle, then fold the dough over to form a half-moon shape. Press the edges together to seal, using a fork to crimp the edges.
- Brush the tops of the hand pies with the beaten egg wash for a golden finish.
- Place the hand pies on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
- Allow to cool slightly before serving.
Notes
- For extra flavor, you can add a bit of hot sauce or diced jalapeños to the filling.
- These hand pies can be frozen before baking and baked directly from frozen when you’re ready to serve.
- Try using puff pastry for an even flakier crust.
