Description

A flavorful, hearty dish filled with a rich blend of spices, tender chicken, sausage, and seafood, all simmered in a savory broth for a true taste of Cajun cuisine.


Ingredients

  • 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1/2 lb Andouille sausage, sliced
  • 1/2 lb shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1/4 cup flour (for roux)
  • 1/4 cup vegetable oil
  • 2 tbsp Cajun seasoning
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tsp hot sauce (optional)
  • 1/2 cup fresh parsley, chopped (for garnish)
  • Cooked rice (for serving)

Instructions

  1. In a large pot or Dutch oven, make the roux by heating oil over medium heat. Stir in the flour and cook, stirring constantly, until the mixture turns a rich brown color (about 10-15 minutes).
  2. Add the onion, bell pepper, celery, and garlic to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in the diced tomatoes, chicken broth, Cajun seasoning, thyme, bay leaves, and hot sauce. Bring the mixture to a boil, then reduce to a simmer.
  4. Simmer for 30 minutes to allow the flavors to meld together, stirring occasionally.
  5. Add the chicken and sausage, and cook for an additional 15-20 minutes, or until the chicken is cooked through.
  6. Stir in the shrimp and cook for another 5-7 minutes, or until they turn pink and are cooked through.
  7. Season with salt and pepper to taste. Remove the bay leaves.
  8. Serve the gumbo over cooked rice and garnish with fresh parsley.

Notes

  • For a spicier kick, you can add more hot sauce or cayenne pepper to taste.
  • Feel free to use other seafood like crab or oysters, or replace the sausage with another smoked variety.
  • This dish can be made a day ahead to allow the flavors to develop even further.
