- 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces
- 1/2 lb Andouille sausage, sliced
- 1/2 lb shrimp, peeled and deveined
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1/4 cup flour (for roux)
- 1/4 cup vegetable oil
- 2 tbsp Cajun seasoning
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 1 tsp hot sauce (optional)
- 1/2 cup fresh parsley, chopped (for garnish)
- Cooked rice (for serving)
Instructions
- In a large pot or Dutch oven, make the roux by heating oil over medium heat. Stir in the flour and cook, stirring constantly, until the mixture turns a rich brown color (about 10-15 minutes).
- Add the onion, bell pepper, celery, and garlic to the pot. Cook until softened, about 5-7 minutes.
- Stir in the diced tomatoes, chicken broth, Cajun seasoning, thyme, bay leaves, and hot sauce. Bring the mixture to a boil, then reduce to a simmer.
- Simmer for 30 minutes to allow the flavors to meld together, stirring occasionally.
- Add the chicken and sausage, and cook for an additional 15-20 minutes, or until the chicken is cooked through.
- Stir in the shrimp and cook for another 5-7 minutes, or until they turn pink and are cooked through.
- Season with salt and pepper to taste. Remove the bay leaves.
- Serve the gumbo over cooked rice and garnish with fresh parsley.
Notes
- For a spicier kick, you can add more hot sauce or cayenne pepper to taste.
- Feel free to use other seafood like crab or oysters, or replace the sausage with another smoked variety.
- This dish can be made a day ahead to allow the flavors to develop even further.
