Description

These Cacio e Pepe Roasted Nuts are a crunchy, cheesy snack inspired by the classic Roman pasta dish. Packed with flavor from parmesan, cracked black pepper, and a trio of buttery nuts, they’re perfect for parties, grazing boards, or just a cozy night in.

Ingredients

Scale
  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup raw pecans
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon freshly cracked black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almonds, cashews, and pecans with olive oil. Toss well to coat.
  3. Add the grated parmesan, black pepper, garlic powder, and sea salt. Stir until the nuts are evenly coated.
  4. Spread the nuts in a single layer on the prepared baking sheet.
  5. Roast in the oven for 18 to 20 minutes, stirring halfway through, until golden and aromatic.
  6. Remove from the oven and let cool completely on the baking sheet to crisp up.
  7. Transfer to a jar or bowl and enjoy.

Notes

  • Let nuts cool completely before storing to maintain crunch.
  • Use freshly grated parmesan for best texture and flavor.
  • Adjust pepper to taste if you prefer a milder or spicier version.
  • Store in an airtight jar for up to one week at room temperature.
