Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups brown sugar

  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup buttermilk
  • 1/2 cup butterscotch chips, melted
  • Caramel Frosting: 1 cup unsalted butter, 3 cups powdered sugar, 1/2 cup caramel sauce, 2 tbsp heavy cream, 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, then vanilla.
  4. Melt the butterscotch chips and stir into the wet mixture.
  5. Alternate adding the dry ingredients and buttermilk, mixing until just combined.
  6. Divide the batter evenly between the cake pans and bake for 30–35 minutes, or until a toothpick inserted comes out clean. Cool completely.
  7. To make the frosting, beat butter until fluffy, add powdered sugar, caramel sauce, heavy cream, and vanilla until smooth and spreadable.
  8. Frost the cooled cakes and drizzle with extra caramel sauce if desired.
