Description

Burst Tomato Burrata Pasta is a luxurious yet simple dish featuring sweet, blistered cherry tomatoes, creamy burrata cheese, and fresh herbs tossed with perfectly cooked pasta. It’s a fresh and comforting meal ideal for any night of the week.


Ingredients

  • 12 oz pasta (spaghetti, linguine, or your choice)
  • 2 tablespoons olive oil
  • 3 cups cherry tomatoes
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, torn
  • 8 oz burrata cheese
  • Grated Parmesan cheese, for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain the pasta.
  2. Meanwhile, heat olive oil in a large skillet over medium heat. Add the cherry tomatoes and cook, stirring occasionally, until they burst and release their juices, about 7–10 minutes.
  3. Add the minced garlic, salt, pepper, and red pepper flakes (if using) to the skillet. Cook for another 1–2 minutes until fragrant.
  4. Add the cooked pasta to the skillet and toss to coat, adding reserved pasta water a little at a time to loosen the sauce if needed.
  5. Remove from heat and stir in fresh basil leaves.
  6. Transfer pasta to serving bowls. Tear the burrata into pieces and place on top of the pasta.
  7. Sprinkle with grated Parmesan if desired and serve immediately.

Notes

  • Use a mix of red and yellow cherry tomatoes for extra color and sweetness.
  • If burrata isn’t available, you can substitute fresh mozzarella, though the texture will be slightly different.
  • Drizzle with a little extra olive oil or balsamic glaze before serving for added richness.
