Bruschetta Chicken Pasta is a fresh and flavorful dish combining tender chicken, garlic, tomatoes, and basil over a bed of pasta, inspired by classic Italian bruschetta.

- 12 oz pasta (penne or spaghetti)
- 2 tbsp olive oil
- 2 boneless, skinless chicken breasts
- 4 medium tomatoes, diced
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 tbsp balsamic vinegar
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Optional: red pepper flakes for a kick
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 6-7 minutes per side or until fully cooked. Remove and let rest, then slice thinly.
- In the same skillet, add garlic and sauté for 1 minute until fragrant. Add diced tomatoes and cook for 3-4 minutes until slightly softened.
- Add balsamic vinegar and chopped basil to the skillet. Stir to combine.
- Add cooked pasta to the tomato mixture and toss well. Add sliced chicken on top.
- Sprinkle with Parmesan cheese and optional red pepper flakes before serving.
Notes
- Use cherry tomatoes for a sweeter flavor.
- Grill the chicken for a smoky touch.
- Add fresh mozzarella or burrata for extra creaminess.
