Description

Bruschetta Chicken Pasta is a fresh and flavorful dish combining tender chicken, garlic, tomatoes, and basil over a bed of pasta, inspired by classic Italian bruschetta.


Ingredients

  • 12 oz pasta (penne or spaghetti)
  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts
  • 4 medium tomatoes, diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tbsp balsamic vinegar
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Optional: red pepper flakes for a kick

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 6-7 minutes per side or until fully cooked. Remove and let rest, then slice thinly.
  3. In the same skillet, add garlic and sauté for 1 minute until fragrant. Add diced tomatoes and cook for 3-4 minutes until slightly softened.
  4. Add balsamic vinegar and chopped basil to the skillet. Stir to combine.
  5. Add cooked pasta to the tomato mixture and toss well. Add sliced chicken on top.
  6. Sprinkle with Parmesan cheese and optional red pepper flakes before serving.

Notes

  • Use cherry tomatoes for a sweeter flavor.
  • Grill the chicken for a smoky touch.
  • Add fresh mozzarella or burrata for extra creaminess.
