- 2 cups broccoli florets, steamed
- 4 slices of bread (preferably sourdough or whole grain)
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 tbsp olive oil or butter
- Salt and pepper to taste
- 1/2 tsp dried oregano (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C) or heat a skillet over medium heat.
- In a mixing bowl, combine steamed broccoli, cream cheese, cheddar cheese, Parmesan, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.
- Spread the broccoli mixture evenly on each slice of bread, then sprinkle dried oregano over the top if using.
- Place the slices of bread on a baking sheet and drizzle or brush with olive oil or butter.
- Bake in the preheated oven for 10-15 minutes, or until the bread is toasted and the cheese is melted and bubbly. Alternatively, toast in a skillet over medium heat, flipping carefully to toast both sides and melt the cheese.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- This melt is delicious on any type of bread, but sourdough or multigrain adds extra flavor.
- For a bit of spice, add red pepper flakes or a dash of hot sauce to the broccoli mixture.
- Can be served as a snack or a light lunch with a side salad.
