Description

Ingredients

  • 4 slices of bread (sourdough, white, or whole wheat)
  • 2 tablespoons butter, softened
  • 2 large eggs
  • 4 slices bacon, cooked until crispy
  • 2 slices cheddar cheese
  • 2 slices mozzarella or American cheese
  • Salt and pepper, to taste
  • 1 tablespoon milk (optional, for fluffier eggs)

Instructions

  1. In a small bowl, whisk the eggs with a pinch of salt, pepper, and milk if using.
  2. Scramble the eggs in a nonstick skillet over medium heat until just cooked. Set aside.
  3. Butter one side of each slice of bread.
  4. On the unbuttered side of two slices, layer cheddar cheese, scrambled eggs, bacon, and mozzarella cheese. Top with remaining bread, buttered side out.
  5. Heat a skillet or griddle over medium heat. Cook sandwiches for 2–3 minutes per side until bread is golden brown and cheese is melted.
  6. Slice in half and serve warm.
