- 4 slices of bread (sourdough, white, or whole wheat)
- 2 tablespoons butter, softened
- 2 large eggs
- 4 slices bacon, cooked until crispy
- 2 slices cheddar cheese
- 2 slices mozzarella or American cheese
- Salt and pepper, to taste
- 1 tablespoon milk (optional, for fluffier eggs)
Instructions
- In a small bowl, whisk the eggs with a pinch of salt, pepper, and milk if using.
- Scramble the eggs in a nonstick skillet over medium heat until just cooked. Set aside.
- Butter one side of each slice of bread.
- On the unbuttered side of two slices, layer cheddar cheese, scrambled eggs, bacon, and mozzarella cheese. Top with remaining bread, buttered side out.
- Heat a skillet or griddle over medium heat. Cook sandwiches for 2–3 minutes per side until bread is golden brown and cheese is melted.
- Slice in half and serve warm.
