- 2 salmon fillets
- 8 oz pasta (such as penne or spaghetti)
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 1/2 cup Boursin cheese (garlic & herb flavor)
- 1/4 cup heavy cream
- 1/4 cup chicken broth (or vegetable broth)
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 tablespoon lemon juice (optional, for extra brightness)
Instructions
- Cook the pasta according to package instructions. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Season the salmon fillets with salt and pepper and cook for 3-4 minutes per side, or until fully cooked and flaky. Remove the salmon from the skillet and set aside.
- In the same skillet, add the halved cherry tomatoes and cook for 2-3 minutes, until softened.
- Add the Boursin cheese, heavy cream, and chicken broth to the skillet. Stir until the cheese has melted and the sauce becomes creamy. Add the dried oregano and season with salt and pepper to taste.
- Flake the cooked salmon into bite-sized pieces and add it back to the skillet with the sauce. Stir to combine.
- Add the cooked pasta to the skillet and toss it in the creamy sauce. If needed, add a little reserved pasta water to help coat the pasta with the sauce.
- Drizzle with lemon juice if desired, and garnish with fresh parsley before serving.
Notes
- This dish pairs well with a light green salad and crusty bread for a complete meal.
- If you prefer, you can substitute the salmon with another fish like trout or even grilled chicken.
- For a lighter version, use half-and-half instead of heavy cream.
