Description

Silky, jewel-purple blueberry butter slowly simmered with warm spices and a kiss of lemon, perfect for spreading on toast, swirling into yogurt, or gifting in pretty jars.


Ingredients

  • Blueberries, fresh or frozen: 6 cups
  • Granulated sugar: 1 cup
  • Brown sugar: 1/2 cup, packed
  • Fresh lemon juice: 2 tablespoons
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: 1/4 teaspoon
  • Water: 1/2 cup
  • Fine sea salt: pinch, optional to enhance flavor

Instructions

  1. Preheat your equipment by setting a heavy-bottomed pot on the stove over medium heat.
  2. Combine blueberries, granulated sugar, brown sugar, lemon juice, water, cinnamon, nutmeg, and a pinch of salt in the pot, then stir to coat the berries evenly.
  3. Prepare your cooking vessel for storage by washing and sterilizing glass jars and lids, then set them aside to dry.
  4. Assemble the mixture by bringing it to a gentle simmer, stirring every few minutes so the fruit cooks evenly and does not stick.
  5. Cook to perfection by reducing the heat to low and simmering uncovered for 45 to 60 minutes, stirring occasionally until thick, glossy, and reduced. The mixture should coat the back of a spoon.
  6. Finish by blending the hot mixture with an immersion blender until silky smooth, then taste and adjust sweetness or lemon as desired.
  7. Serve and enjoy by ladling into clean jars, letting it cool to room temperature, sealing, and refrigerating. Spread on toast, pancakes, or swirl into yogurt.

Notes

  • Note: A heavy-bottomed pot helps prevent scorching during reduction.
  • For a brighter flavor, add a strip of lemon zest during the simmer and remove before blending.
  • If using frozen blueberries, thaw and drain excess liquid before cooking to shorten reduction time.
