Description

Blueberry Breakfast Rounds are wholesome, chewy discs packed with oats, juicy blueberries, and natural sweetness—perfect for a grab-and-go breakfast or a nourishing snack any time of day.


Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/3 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup fresh or frozen blueberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together oats, whole wheat flour, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together honey (or maple syrup), applesauce, egg, and vanilla extract.
  4. Combine wet and dry ingredients, stirring until just mixed.
  5. Gently fold in the blueberries.
  6. Using a spoon or cookie scoop, drop rounds of dough onto the prepared baking sheet and slightly flatten each one.
  7. Bake for 12–15 minutes, or until edges are lightly golden and centers are set.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Use frozen blueberries straight from the freezer to prevent excess moisture.
  • Add chopped nuts or seeds for extra texture and protein.
  • Store in an airtight container for up to 4 days or freeze for longer shelf life.
