- 1 1/2 cups rolled oats
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/3 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup fresh or frozen blueberries
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together oats, whole wheat flour, baking powder, salt, and cinnamon.
- In another bowl, whisk together honey (or maple syrup), applesauce, egg, and vanilla extract.
- Combine wet and dry ingredients, stirring until just mixed.
- Gently fold in the blueberries.
- Using a spoon or cookie scoop, drop rounds of dough onto the prepared baking sheet and slightly flatten each one.
- Bake for 12–15 minutes, or until edges are lightly golden and centers are set.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Use frozen blueberries straight from the freezer to prevent excess moisture.
- Add chopped nuts or seeds for extra texture and protein.
- Store in an airtight container for up to 4 days or freeze for longer shelf life.
