Description

Flaky, golden blackberry hand pies filled with juicy berries and a hint of lemon. These handheld treats are perfect for snacking, sharing, or bringing to any gathering.


Ingredients

  • 2 cups fresh blackberries
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 2 pre-made 9-inch pie dough rounds
  • 1 egg
  • 1 tablespoon milk
  • Coarse sugar, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine blackberries, sugar, cornstarch, and lemon juice. Stir until berries are well coated.
  3. Roll out the pie dough on a floured surface and cut into 4- to 5-inch circles.
  4. Add a spoonful of the berry mixture to each dough circle, fold into a half-moon, and crimp edges with a fork.
  5. Place the hand pies on the baking sheet. Mix the egg and milk, then brush over the tops of each pie.
  6. Sprinkle with coarse sugar and cut a small slit on top of each pie for steam to escape.
  7. Bake for 18 to 22 minutes or until golden brown. Let cool slightly before serving.

Notes

  • Chill dough before assembling to make it easier to handle.
  • Do not overfill to avoid bursting pies.
  • Let pies cool for at least 10 minutes before serving.
