Description

These moist, warmly spiced pumpkin cream cheese muffins are filled with a luscious swirl of cream cheese and topped with crunchy pumpkin seeds. A cozy fall favorite that’s even better than the coffee shop version.


Ingredients

  • 1 cup canned pumpkin puree
  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 8 ounces cream cheese
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1/4 cup pumpkin seeds

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. In one bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, and vegetable oil until smooth.
  4. Slowly add the dry ingredients to the wet mixture and stir just until combined.
  5. In a small bowl, beat the softened cream cheese with powdered sugar and vanilla until smooth.
  6. Fill each muffin cup about 2/3 full with batter. Add a heaping teaspoon of cream cheese mixture into the center of each muffin and gently press it in.
  7. Sprinkle pumpkin seeds on top of each muffin.
  8. Bake for 18–22 minutes or until a toothpick inserted in the muffin part (not the cream cheese) comes out clean.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use room temperature cream cheese for a smooth swirl.
  • Don’t overmix the batter to keep muffins tender.
  • Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
  • Sprinkle coarse sugar on top before baking for extra crunch.
