These Best Chicken Tacos are flavorful, juicy, and easy to make using either the stovetop or crockpot. Made with tender shredded chicken seasoned with a delicious blend of spices, they’re perfect for taco night or feeding a crowd.

- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil (for stovetop method)
- 1/2 cup chicken broth (or water for stovetop)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon oregano
- Salt and pepper to taste
- Juice of 1 lime
- 8 small corn or flour tortillas
- Optional toppings: shredded lettuce, diced tomatoes, avocado, cheese, sour cream, chopped cilantro
Instructions
- Stovetop Method: Heat olive oil in a skillet over medium heat. Season chicken with spices. Sear 2–3 minutes per side. Add broth, cover, and simmer for 15–20 minutes until cooked through. Shred and return to skillet with lime juice.
- Crockpot Method: Place chicken in crockpot. Sprinkle with spices and pour in broth. Cook on low for 6–7 hours or high for 3–4 hours. Shred chicken and mix with cooking juices and lime juice.
- Warm tortillas in a skillet or microwave. Fill with shredded chicken and desired toppings.
- Serve immediately with extra lime wedges on the side.
Notes
- For extra flavor, add a chipotle pepper in adobo sauce to the crockpot.
- Double the batch and freeze leftovers for quick taco nights.
- Use rotisserie chicken and skip cooking for an ultra-fast version.
