Description

Berry Chantilly Cake is a light and elegant dessert featuring layers of moist vanilla sponge cake, fresh berries, and luscious Chantilly cream. This classic French-inspired cake is perfect for celebrations or a special treat.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for Chantilly cream)
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Alternately add flour mixture and milk, beginning and ending with flour, mixing until just combined.
  6. Divide batter evenly between pans and bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cakes cool completely on a wire rack.
  8. For the Chantilly cream, beat heavy cream, powdered sugar, and vanilla until soft peaks form.
  9. To assemble, place one cake layer on a serving plate, spread a layer of Chantilly cream, and scatter fresh berries.
  10. Top with second cake layer, frost the top and sides with remaining Chantilly cream, and decorate with more fresh berries.
  11. Chill for at least 1 hour before serving.

  • Use fresh, ripe berries for best flavor.
  • Chill the mixing bowl and beaters before whipping cream for easier peaks.
  • For extra flavor, brush cake layers with berry syrup or liqueur before assembling.
