Description

Beef Stroganoff is a classic Russian-inspired comfort dish made with tender strips of beef, sautéed mushrooms, onions, and a creamy sour cream sauce. Served over egg noodles, rice, or mashed potatoes, this hearty meal is perfect for weeknights or special family dinners.


Ingredients

  • 1 lb beef sirloin or tenderloin, sliced into thin strips
  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1/2 cup sour cream
  • Salt and black pepper, to taste
  • 1 tsp Dijon mustard (optional)
  • Chopped parsley for garnish
  • Cooked egg noodles or mashed potatoes, for serving

Instructions

  1. Season beef with salt and pepper. In a large skillet over medium-high heat, heat 1 tablespoon oil. Add beef in batches and sear until browned but not fully cooked. Remove and set aside.
  2. Add remaining oil to the skillet. Sauté onions and garlic until soft, about 3–4 minutes.
  3. Add mushrooms and cook until golden and liquid has evaporated, about 5–7 minutes.
  4. Sprinkle flour over mushroom mixture and stir well. Cook for 1–2 minutes to remove raw flour taste.
  5. Slowly pour in beef broth while stirring, then add Worcestershire sauce and mustard if using. Simmer until slightly thickened.
  6. Return beef to the pan and cook for another 2–3 minutes until heated through. Stir in sour cream and heat gently—do not boil.
  7. Taste and adjust seasoning. Serve hot over egg noodles or mashed potatoes. Garnish with parsley.

Notes

  • Use high-quality, tender beef cuts like sirloin, tenderloin, or ribeye for best results.
  • Sour cream can be substituted with Greek yogurt for a lighter option.
  • Don’t overcook the beef—just sear it briefly to keep it tender.
