Description

A hearty and comforting beef and potato curry made with tender chunks of beef, starchy potatoes, and fragrant spices, all simmered in a rich tomato-based sauce. Perfect with rice or naan for a satisfying meal.


Ingredients

  • 1.5 pounds beef chuck, cubed
  • 3 medium potatoes, peeled and cubed
  • 2 carrots, chopped
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons curry powder
  • 2 tablespoons tomato paste
  • 2.5 cups beef broth
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat.
  2. Add vegetable oil and sear the beef cubes until browned on all sides. Remove and set aside.
  3. In the same pot, sauté onion, garlic, and ginger until fragrant, about 3–4 minutes.
  4. Stir in curry powder and cook for another minute.
  5. Return the beef to the pot. Stir in tomato paste, beef broth, salt, and pepper.
  6. Add potatoes and carrots. Ensure they’re submerged in the liquid.
  7. Bring to a gentle boil, reduce heat, cover, and simmer for about 1.5 hours, until beef is tender and potatoes are soft.
  8. Taste and adjust seasoning. Add more broth if needed to thin the sauce.
  9. Serve hot with steamed rice or naan. Garnish with chopped cilantro if desired.

Notes

  • Use starchy potatoes like Russets for the best texture.
  • Browning the beef first adds deeper flavor.
  • Leftovers taste even better the next day.
