Description
Beef Enchiladas with Red Sauce are a classic Tex-Mex dish featuring seasoned ground beef rolled in soft tortillas, smothered in rich enchilada sauce and melted cheese — hearty, flavorful, and perfect for family dinners.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning or 2 tsp chili powder + 1 tsp cumin
- 1 can (15 oz) red enchilada sauce
- 8 small flour or corn tortillas
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 1/4 cup chopped cilantro (optional)
- Sour cream and sliced green onions for serving (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook ground beef and onion until browned. Add garlic and seasoning; stir well and cook another 2 minutes.
- Pour in 1/3 cup of enchilada sauce and stir into the beef mixture. Remove from heat.
- Warm tortillas slightly to make them pliable. Spoon beef mixture into each tortilla, roll up, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce evenly over the rolled tortillas.
- Top with shredded cheese and cover loosely with foil.
- Bake for 20 minutes covered, then uncover and bake an additional 5–10 minutes until cheese is bubbly and golden.
- Garnish with cilantro, green onions, and serve with sour cream if desired.
Notes
- Use corn tortillas for a more authentic flavor.
- Add black beans or corn to the filling for extra texture.
- Make ahead and refrigerate overnight for easy baking the next day.
