Description

Beef Enchiladas with Red Sauce are a classic Tex-Mex dish featuring seasoned ground beef rolled in soft tortillas, smothered in rich enchilada sauce and melted cheese — hearty, flavorful, and perfect for family dinners.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning or 2 tsp chili powder + 1 tsp cumin
  • 1 can (15 oz) red enchilada sauce
  • 8 small flour or corn tortillas
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped cilantro (optional)
  • Sour cream and sliced green onions for serving (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef and onion until browned. Add garlic and seasoning; stir well and cook another 2 minutes.
  3. Pour in 1/3 cup of enchilada sauce and stir into the beef mixture. Remove from heat.
  4. Warm tortillas slightly to make them pliable. Spoon beef mixture into each tortilla, roll up, and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce evenly over the rolled tortillas.
  6. Top with shredded cheese and cover loosely with foil.
  7. Bake for 20 minutes covered, then uncover and bake an additional 5–10 minutes until cheese is bubbly and golden.
  8. Garnish with cilantro, green onions, and serve with sour cream if desired.

Notes

  • Use corn tortillas for a more authentic flavor.
  • Add black beans or corn to the filling for extra texture.
  • Make ahead and refrigerate overnight for easy baking the next day.
