Description

This BBQ Ranch Sweet Potato Bowl is a hearty, flavorful meal featuring roasted sweet potatoes, shredded chicken, pinto beans, and a tangy coleslaw, all drizzled with a creamy BBQ-ranch sauce and topped with feta and green onions. Perfect for a healthy lunch or dinner.

  • 1 large sweet potato, peeled and cubed
  • Drizzle of olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 can pinto beans, drained and rinsed
  • 2 shredded chicken breasts (or rotisserie chicken)
  • 1/3 cup BBQ sauce
  • 1/2 cup Greek yogurt
  • 1/3 cup ranch dressing
  • 1 lemon, juiced
  • 1 bag (400g) coleslaw mix
  • Feta cheese, for topping
  • 1 green onion, sliced, for topping

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Spread sweet potatoes on a baking sheet and roast for 25–30 minutes, turning halfway, until tender and slightly caramelized.
  3. Meanwhile, warm pinto beans in a small saucepan over medium heat.
  4. In a bowl, mix shredded chicken with BBQ sauce until evenly coated.
  5. In another bowl, combine Greek yogurt, ranch dressing, and lemon juice to make the sauce.
  6. Toss coleslaw mix with a portion of the yogurt-ranch sauce for a lightly dressed slaw.
  7. Assemble bowls: layer roasted sweet potatoes, BBQ chicken, pinto beans, and coleslaw.
  8. Top with crumbled feta and sliced green onion. Drizzle with remaining BBQ-ranch sauce if desired.
  9. Serve warm.
