Description

Juicy grilled chicken skewers coated in a creamy, sweet, and slightly spicy bang bang sauce, finished with fresh green onions for the perfect balance of flavor and texture.


Ingredients

  • 1 ½ pounds boneless skinless chicken thighs, cut into 1 inch pieces
  • 8 to 10 wooden skewers, soaked in water
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons fresh green onions, finely chopped

Instructions

  1. Preheat grill or grill pan to medium high heat.
  2. In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha sauce, and honey until smooth.
  3. In a separate bowl, toss chicken pieces with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  4. Thread seasoned chicken evenly onto soaked wooden skewers.
  5. Lightly oil grill grates, then place skewers on the grill and cook for 10 to 12 minutes, turning occasionally, until chicken reaches an internal temperature of 165°F.
  6. During the last 3 to 4 minutes of cooking, brush skewers generously with the prepared sauce.
  7. Remove from heat, brush with additional sauce if desired, and sprinkle with chopped green onions before serving.

Notes

  • Brush the sauce toward the end of cooking to prevent burning from the sugars.
  • Chicken thighs stay juicier than breast meat, but breast can be used if preferred.
  • Allow skewers to rest for a few minutes before serving to keep them juicy.
  • Adjust the amount of sriracha to control the spice level.
