- 1 ½ pounds boneless skinless chicken thighs, cut into 1 inch pieces
- 8 to 10 wooden skewers, soaked in water
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons fresh green onions, finely chopped
Instructions
- Preheat grill or grill pan to medium high heat.
- In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha sauce, and honey until smooth.
- In a separate bowl, toss chicken pieces with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
- Thread seasoned chicken evenly onto soaked wooden skewers.
- Lightly oil grill grates, then place skewers on the grill and cook for 10 to 12 minutes, turning occasionally, until chicken reaches an internal temperature of 165°F.
- During the last 3 to 4 minutes of cooking, brush skewers generously with the prepared sauce.
- Remove from heat, brush with additional sauce if desired, and sprinkle with chopped green onions before serving.
Notes
- Brush the sauce toward the end of cooking to prevent burning from the sugars.
- Chicken thighs stay juicier than breast meat, but breast can be used if preferred.
- Allow skewers to rest for a few minutes before serving to keep them juicy.
- Adjust the amount of sriracha to control the spice level.
