Description

Bang Bang Chicken Casserole is a bold, spicy, and creamy baked dish that combines tender chicken, pasta, vegetables, and a signature bang bang sauce made with sriracha, mayo, and sweet chili — all topped with melted cheese for an irresistible meal.

  • 12 oz penne or rotini pasta
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, cubed
  • 1 red bell pepper, diced
  • 1 cup shredded carrots
  • 1 cup frozen peas
  • 2 cups shredded mozzarella or Monterey Jack cheese, divided
  • Salt and pepper, to taste
  • For the Bang Bang sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon honey (optional, for balance)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook pasta according to package directions; drain and set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and sauté until cooked through and golden, about 6–7 minutes. Remove from heat.
  4. In a large bowl, mix cooked pasta, chicken, bell pepper, carrots, peas, and 1 1/2 cups of the shredded cheese.
  5. In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth to create the bang bang sauce.
  6. Pour the sauce over the pasta mixture and toss until evenly coated.
  7. Transfer the mixture to the prepared baking dish and top with remaining 1/2 cup cheese.
  8. Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  9. Let rest for a few minutes before serving. Garnish with green onions or cilantro if desired.

Notes

  • Adjust sriracha to your heat preference — use less for milder flavor.
  • Add crushed red pepper flakes or drizzle extra sauce on top for more heat.
  • Can be made ahead and refrigerated before baking.
