- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 3/4 cup chopped walnuts
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, mash the bananas. Add melted butter, both sugars, eggs, and vanilla. Mix until smooth.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Combine the wet and dry ingredients. Stir gently until just combined. Fold in chopped walnuts.
- Pour the batter into the prepared pan. Smooth the top and sprinkle with extra walnuts or cinnamon sugar if desired.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve warm or at room temperature.
