Banana Bread Baked Oats are the perfect blend of sweet banana flavor and wholesome oats, baked into a soft and comforting breakfast treat. Great for meal prep or cozy mornings.

- 2 cups old-fashioned oats
- 2 large ripe bananas
- 1 large egg
- 1 cup milk (any kind)
- 3 tablespoons maple syrup
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish or line with parchment paper.
- In a blender, combine oats, bananas, egg, milk, maple syrup, baking powder, cinnamon, salt, and vanilla extract. Blend until smooth and creamy.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Sprinkle chocolate chips or banana slices on top if using.
- Bake for 30–35 minutes, until the center is set and edges are golden brown.
- Allow to cool for 10 minutes before slicing and serving.
Notes
- Use overripe bananas for the best sweetness and texture.
- Add chopped nuts, dried fruit, or nut butter for variation.
- Store leftovers in the fridge for up to 5 days or freeze slices for quick breakfasts.
