- 1/2 cup Baileys Irish Cream
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 3 tbsp cornstarch
- 1/4 tsp salt
- 4 oz semisweet chocolate, chopped
- 1 tsp peppermint extract
- 1 tsp vanilla extract
- 1 cup whipped cream (for topping)
- Chocolate shavings or mint leaves (for garnish, optional)
Instructions
- In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
- Gradually whisk in milk and Baileys until smooth. Cook over medium heat, whisking constantly, until the mixture begins to thicken and bubble, about 5-7 minutes.
- Remove from heat and stir in chopped chocolate, peppermint extract, and vanilla extract until smooth and fully melted.
- Divide the pudding evenly into serving dishes. Press plastic wrap directly onto the surface to prevent a skin from forming and refrigerate for at least 2 hours.
- Before serving, top with whipped cream and garnish with chocolate shavings or fresh mint leaves.
Notes
- For a stronger mint flavor, add an extra 1/4 tsp peppermint extract.
- This pudding can be made up to 2 days ahead and stored in the refrigerator.
- For a non-alcoholic version, replace Baileys with extra milk and add more peppermint extract.
