Description

Fresh and flavorful vegetarian tacos featuring creamy avocado slices, crisp veggies, and a zesty lime crema—perfect for a light, satisfying meal or Meatless Monday dinner.


Ingredients

  • 2 ripe avocados, sliced
  • 6 small corn or flour tortillas
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled queso fresco or feta (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Hot sauce or salsa (optional)

Instructions

  1. In a small bowl, mix sour cream, lime juice, garlic powder, salt, and pepper to make the lime crema. Set aside.
  2. Warm tortillas in a skillet or microwave.
  3. Assemble tacos by layering lettuce or cabbage, avocado slices, tomatoes, red onion, and cilantro on each tortilla.
  4. Drizzle with lime crema and sprinkle with queso fresco if using.
  5. Add hot sauce or salsa to taste. Serve immediately.
