Description

Creamy, crunchy, and full of bright flavor, these Avocado Caesar Green Beans are a fresh twist on a classic Caesar salad — perfect as a side or light main dish.


Ingredients

  • 1 pound green beans, trimmed
  • 1 large ripe avocado
  • 2 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon anchovy paste (optional)
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • Zest of 1 lemon

Instructions

  1. Bring a pot of salted water to a boil and prepare a bowl of ice water.
  2. Blanch the green beans for 3–4 minutes until bright green and tender-crisp, then transfer to the ice bath to stop cooking. Drain and set aside.
  3. In a blender or food processor, combine avocado, garlic, lemon juice, Dijon mustard, anchovy paste (if using), parmesan, olive oil, salt, and pepper. Blend until smooth.
  4. In a skillet, heat a small drizzle of olive oil over medium heat. Toast breadcrumbs until golden brown, stirring frequently. Set aside.
  5. Toss the cooled green beans with the avocado Caesar dressing until well coated.
  6. Top with toasted breadcrumbs, additional parmesan, and lemon zest just before serving.

Notes

  • Use an ice bath to preserve the bright green color and crisp texture of the green beans.
  • The dressing can be made up to 2 days ahead and stored in the fridge.
  • Skip the anchovy paste and use capers or soy sauce for a vegetarian alternative.
