Creamy, crunchy, and full of bright flavor, these Avocado Caesar Green Beans are a fresh twist on a classic Caesar salad — perfect as a side or light main dish.

- 1 pound green beans, trimmed
- 1 large ripe avocado
- 2 garlic cloves, minced
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon anchovy paste (optional)
- 1/4 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- Zest of 1 lemon
Instructions
- Bring a pot of salted water to a boil and prepare a bowl of ice water.
- Blanch the green beans for 3–4 minutes until bright green and tender-crisp, then transfer to the ice bath to stop cooking. Drain and set aside.
- In a blender or food processor, combine avocado, garlic, lemon juice, Dijon mustard, anchovy paste (if using), parmesan, olive oil, salt, and pepper. Blend until smooth.
- In a skillet, heat a small drizzle of olive oil over medium heat. Toast breadcrumbs until golden brown, stirring frequently. Set aside.
- Toss the cooled green beans with the avocado Caesar dressing until well coated.
- Top with toasted breadcrumbs, additional parmesan, and lemon zest just before serving.
Notes
- Use an ice bath to preserve the bright green color and crisp texture of the green beans.
- The dressing can be made up to 2 days ahead and stored in the fridge.
- Skip the anchovy paste and use capers or soy sauce for a vegetarian alternative.
