- 8 thick beef or pork sausages
- 1 large brown onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons curry powder
- 1 tablespoon plain flour
- 2 cups beef stock
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 2 medium potatoes, peeled and diced
- 1 cup frozen peas
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Set a large skillet over medium heat and warm up.
- Brown the sausages on all sides, then remove and set aside.
- In the same pan, cook onion and garlic until soft and fragrant.
- Add curry powder and flour, stirring constantly for one minute.
- Gradually pour in beef stock while stirring to prevent lumps. Add tomato paste, Worcestershire sauce, diced potatoes, and the browned sausages.
- Simmer covered for 15–20 minutes until the potatoes are tender and sausages are fully cooked.
- Stir in frozen peas and cook for an additional 5 minutes. Season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot over mashed potatoes or rice.
