Description

Warm, cinnamon-spiced apple filling wrapped in soft flour tortillas, baked with a buttery brown-sugar sauce until caramelized, served warm with optional vanilla ice cream for a cozy dessert twist on classic apple pie.

  • 8 medium flour tortillas (8-inch)
  • 1/2 cup (1 stick) unsalted butter, melted

  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat: Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  2. Make the sauce: In a small saucepan over medium heat, melt the butter, then stir in the brown sugar, granulated sugar, water, and ground cinnamon until the mixture is smooth and bubbling. Remove from heat.
  3. Prepare tortillas: Lay the flour tortillas on a clean surface and warm them slightly so they are pliable and do not tear when rolled.
  4. Fill and roll: Spoon about 2 to 3 tablespoons of apple pie filling onto the center of each tortilla, roll tightly, and place seam-side down in the prepared baking dish.
  5. Top and bake: Pour the warm butter-sugar-cinnamon sauce evenly over the arranged enchiladas. Bake uncovered for 25 minutes, until the edges are golden and the sauce is bubbling.
  6. Rest: Let the enchiladas rest for 5 minutes out of the oven to allow the sauce to thicken slightly and set.
  7. Serve: Serve warm, spooning extra sauce over the enchiladas and adding a scoop of vanilla ice cream or a dusting of powdered sugar if desired.
