Description

Moist and tender Apple Cinnamon Bread with a sweet cinnamon swirl and juicy apple bits, perfect for cozy mornings or an afternoon treat.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 2 teaspoons ground cinnamon
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup milk
  • 2 medium apples, peeled and finely chopped (about 2 cups)
  • Optional topping: 2 tablespoons granulated sugar mixed with 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with a parchment sling.
  2. Whisk the flour, baking powder, salt, and cinnamon in a bowl until evenly combined.
  3. In a separate bowl, whisk the granulated sugar, brown sugar, melted butter, eggs, vanilla, and milk until smooth.
  4. Stir the dry ingredients into the wet just until no dry streaks remain, keeping the batter slightly lumpy for a tender crumb.
  5. Spread half the batter into the prepared pan, sprinkle with half the apples and half the cinnamon sugar, then repeat with remaining batter and apples. Finish with remaining cinnamon sugar on top.
  6. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool in the pan for 10 minutes, then lift out and cool completely on a rack before slicing.
  8. Serve warm or at room temperature, plain or with a light drizzle of glaze or a pat of butter.

Notes

  • For balanced flavor, use a mix of tart and sweet apples such as Granny Smith and Honeycrisp.
  • Avoid overmixing the batter to keep the loaf soft and tender.
  • Loaf tastes even better the next day as spices bloom and moisture redistributes.
  • Freeze sliced loaf for quick breakfasts, up to 3 months, and reheat in a toaster oven.
