- 1 ½ cups Apple Butter
- 1 (14-ounce) can Sweetened Condensed Milk
- 2 large Eggs
- 1 teaspoon Cinnamon
- ¼ teaspoon Nutmeg
- ¼ teaspoon Salt
- 1 teaspoon Vanilla Extract
- Whipped Cream (Optional), for serving
Instructions
- Preheat your oven to 350°F and place the rack in the center.
- In a food processor, pulse Biscoff cookies into fine crumbs and mix with melted butter until evenly combined.
- Press the cookie mixture firmly into a 9-inch pie dish, coating the bottom and sides. Chill in the fridge for 10 minutes.
- In a large bowl, whisk together apple butter, sweetened condensed milk, eggs, cinnamon, nutmeg, salt, and vanilla until smooth.
- Pour the filling into the chilled crust and bake for 35–40 minutes, until the center is just set.
- Let the pie cool completely on a wire rack, then refrigerate for at least 2 hours.
- Top with whipped cream if desired, slice, and serve.
