Description

This Apple Butter Pie with Biscoff Cookie Crust is a warm, spiced dessert that combines creamy apple filling with a crunchy, caramelized cookie crust—perfect for fall or any time you’re craving comfort.

Ingredients

Scale
  • 1 ½ cups Biscoff Cookies, finely crushed
  • 6 tablespoons Unsalted Butter, melted
  • 1 ½ cups Apple Butter
  • 1 (14-ounce) can Sweetened Condensed Milk
  • 2 large Eggs
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Nutmeg
  • ¼ teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • Whipped Cream (Optional), for serving

Instructions

  1. Preheat your oven to 350°F and place the rack in the center.
  2. In a food processor, pulse Biscoff cookies into fine crumbs and mix with melted butter until evenly combined.
  3. Press the cookie mixture firmly into a 9-inch pie dish, coating the bottom and sides. Chill in the fridge for 10 minutes.
  4. In a large bowl, whisk together apple butter, sweetened condensed milk, eggs, cinnamon, nutmeg, salt, and vanilla until smooth.
  5. Pour the filling into the chilled crust and bake for 35–40 minutes, until the center is just set.
  6. Let the pie cool completely on a wire rack, then refrigerate for at least 2 hours.
  7. Top with whipped cream if desired, slice, and serve.

Notes

  • Chill the crust before baking for best structure.
  • Let the pie cool fully before slicing for clean pieces.
  • Adjust spices to taste if you like it more or less spiced.
