Description

A soothing and nourishing soup made with tender chicken, creamy coconut milk, and anti-inflammatory ingredients like turmeric, ginger, and garlic — perfect for boosting immunity and warming the soul.


Ingredients

  • 1 tablespoon coconut oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground black pepper
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can (13.5 ounces) coconut milk
  • 2 medium carrots, sliced
  • 2 cups baby spinach
  • Juice of 1 lime
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat coconut oil over medium heat. Add onion and sauté for 4–5 minutes until softened.
  2. Stir in garlic, ginger, turmeric, and black pepper. Cook for 1–2 minutes until fragrant.
  3. Pour in chicken broth and bring to a gentle boil. Add carrots and simmer for 10 minutes until tender.
  4. Stir in shredded chicken and coconut milk. Reduce heat and simmer for 5 minutes.
  5. Add baby spinach and cook for 1–2 minutes until wilted.
  6. Stir in lime juice and season with salt to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier kick, add a pinch of chili flakes or fresh sliced chili.
  • Use freshly grated turmeric for an even more vibrant flavor and color.
