Description

Soft, chewy, and naturally gluten-free, these almond flour chocolate chip cookies are rich with nutty flavor and gooey chocolate in every bite.


Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 to 2/3 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together almond flour, baking soda, and salt.
  3. In a separate bowl, mix melted coconut oil, maple syrup, egg, and vanilla extract until combined.
  4. Pour wet ingredients into dry and stir until a dough forms. Fold in chocolate chips.
  5. Scoop dough into 1.5 tablespoon-sized balls, place on baking sheet, and flatten slightly.
  6. Bake for 10 to 12 minutes, until edges are golden and centers are just set.
  7. Let cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

  • Chilling the dough for 20 minutes prevents spreading and makes shaping easier.
