Description

Moist, chewy, and packed with goodness, these Almond Butter Chocolate Chip Zucchini Bars blend wholesome ingredients with indulgent flavor. Perfect for snacks, breakfast, or dessert.

Ingredients

Scale
  • 1 cup almond butter
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup finely shredded zucchini
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, whisk together almond butter, maple syrup, egg, and vanilla until smooth. Stir in shredded zucchini.
  3. Add oats, baking soda, and salt. Stir until just combined, then fold in chocolate chips.
  4. Spread the batter evenly into the prepared dish.
  5. Bake for 25–30 minutes, or until golden brown and a toothpick comes out clean.
  6. Let cool completely before slicing into bars.

Notes

  • Lightly drain zucchini for best texture — no need to squeeze it dry.
  • Cool bars completely before slicing for cleaner cuts.
  • Store in fridge for up to a week or freeze for longer shelf life.
