Description

This velvety 5 Ingredient Tomato Soup is rich, comforting, and incredibly easy to make. With just pantry staples and minimal prep, it’s the perfect cozy bowl for any day of the week.


Ingredients

  • 2 cans (28 oz each) canned whole tomatoes
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth

Instructions

  1. Warm a large pot over medium heat.
  2. Add olive oil and sauté chopped onion for 5 to 7 minutes until soft.
  3. Add garlic and cook for another minute until fragrant.
  4. Pour in canned tomatoes with their juices and vegetable broth. Stir and bring to a boil.
  5. Reduce heat and simmer uncovered for 25 to 30 minutes.
  6. Remove from heat and blend until smooth using an immersion or countertop blender.
  7. Season to taste and serve hot with a drizzle of olive oil.
