- 2 cans (28 oz each) canned whole tomatoes
- 1 large yellow onion, chopped
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 2 cups vegetable broth
Instructions
- Warm a large pot over medium heat.
- Add olive oil and sauté chopped onion for 5 to 7 minutes until soft.
- Add garlic and cook for another minute until fragrant.
- Pour in canned tomatoes with their juices and vegetable broth. Stir and bring to a boil.
- Reduce heat and simmer uncovered for 25 to 30 minutes.
- Remove from heat and blend until smooth using an immersion or countertop blender.
- Season to taste and serve hot with a drizzle of olive oil.
Notes
- Add a pinch of sugar if tomatoes taste too acidic.
- Stir in cream or coconut milk for a creamy version.
- Garnish with basil, cracked pepper, or parmesan for extra flavor.
