Description

A silky, comforting pasta made with just spaghetti, extra-virgin olive oil, and Parmesan cheese. This quick pantry dinner comes together fast and delivers rich, savory flavor with almost no effort.


Ingredients

  • 8 ounces spaghetti
  • 1/3 cup extra-virgin olive oil
  • 1 cup finely grated Parmesan cheese

Instructions

  1. Bring a large pot of water to a boil over high heat.
  2. Measure the olive oil and finely grate the Parmesan cheese.
  3. Add the spaghetti to the boiling water and cook until tender according to the package directions. Reserve 1/2 cup pasta water before draining.
  4. Transfer the hot drained spaghetti to a large warm bowl or pot and drizzle in the olive oil. Toss well to coat.
  5. Add the Parmesan cheese a little at a time, tossing continuously. Add a splash of the reserved pasta water as needed until the cheese melts into a light, silky coating.
  6. Toss until glossy and evenly coated.
  7. Serve immediately with the remaining Parmesan over the top.

Notes

  • Use freshly grated Parmesan for the smoothest texture.
  • Reserve extra pasta water in case the pasta needs loosening.
  • Toss while the pasta is hot so the cheese melts evenly.
  • Store leftovers in the refrigerator for up to 3 days and reheat gently with a splash of water.
