Description

- 8 ounces spaghetti
- 1/3 cup extra-virgin olive oil
- 1 cup finely grated Parmesan cheese
Instructions
- Bring a large pot of water to a boil over high heat.
- Measure the olive oil and finely grate the Parmesan cheese.
- Add the spaghetti to the boiling water and cook until tender according to the package directions. Reserve 1/2 cup pasta water before draining.
- Transfer the hot drained spaghetti to a large warm bowl or pot and drizzle in the olive oil. Toss well to coat.
- Add the Parmesan cheese a little at a time, tossing continuously. Add a splash of the reserved pasta water as needed until the cheese melts into a light, silky coating.
- Toss until glossy and evenly coated.
- Serve immediately with the remaining Parmesan over the top.
Notes
- Use freshly grated Parmesan for the smoothest texture.
- Reserve extra pasta water in case the pasta needs loosening.
- Toss while the pasta is hot so the cheese melts evenly.
- Store leftovers in the refrigerator for up to 3 days and reheat gently with a splash of water.
